Fresh Garden Salsa

Easy do-it-yourself-in-the-blender for a hot afternoon, and great with a fruity mixed drink drink, fresh garden salsa is probably one of the healthiest, tastiest salsa’s you’ll find.  I don’t tend to eat it during the day, though–I save it for my midnight snack.  And with a prep time under one minute, why not?

I suggest serving with pretzels or pita chips–just to shake things up a bit.  Regular flour tortilla chips are good, too.  Some of you may also notice I substituted parsley for cilantro, but keep in mind that they’ll both do the trick.  Parsley adds more of a neutral, salad-like flavor, while cilantro adds more tang.

Prep time: 1 minute

Setting: CHOP*

(Note: some blenders may require a few tbsps of water to properly mix all ingredients)

Ingredients:

  1. 2 whole roma tomatoes ($1.19)
  2. 2 cups fresh parsley, chopped ($0.75)
  3. 1 clove garlic, whole (less than $0.10)
  4. 1tsp salt
  5. 1tbsp cumin
  6. 1sp red pepper flakes
  7. juice from one whole lime ($0.67)

Total price:  $2.71 (+ cost of spices)
